Lavina Winery was founded by Bakar Narsia in Tbilisi, the capital of Georgia, he is using the traditional Georgian method of winemaking, fermenting the wine in qvevri. The winery owns just 2 hectares of vineyards in both Imereti and the Kartli region. The label tells the love story of winemaker Bakar Narsia and his wife.
Aladastari is an indigenous Georgian grape variety. Lavina winery produces wines using biodynamics methods, wild yeasts and no added sulfites.
Figs, pomegrantes, bay leaves and quite a bit of effervescence. So much so that we're gonna double dip this in the sparkling category.
Hard not to editorialize on this one a little bit, but it's a grape you might never try again in your life, it has such a delightful amount of sparkle to it that catches you off guard, it's elegant yet weird - it's been a while since a wine stayed on my mind days after having it.
