Tissot "Indigene" Cremant du Jura

Ubiquitous in the Jura for natural wine and biodynamic farming, Tissot wines are one of the most singular wines on the planet.

The Indigene is half Pinot Noir and Chardonnay with a little Jura twist of some Poulsard and Trousseau in there as well. Re-fermented with Tissot's own Vin de Paille to achieve it's champagne-like bubbles. 

Hard to describe. Champagne with an edge? Orchard fruit, zest, salt, almonds, and minerality for days and days.
